XANTHAN GUM is a high molecular polysaccharide. It is
produced from the fermentation of carbonhydrate with Xanthomonas campestris. It is soluble in water, but not in organic solvent. It is used as a rheology control
agent in aqueous systems and as a stabilizer for emulsions and suspensions. Its
numerous areas of applications cover wide range from the food
industry to oil recovery.
